How To: 3 Salmon Dishes in Under 30 minutes
Sometimes putting together a DE-lish meal when you’re in a rush for the whole family can be difficult. It needs to be nutritious, delicious and good for you and your babes. I know that dinner is always on my mind and coming home to a yummy meal is AH-mazing. I love, love, love salmon and cook it at least once a week! Fish oil and seafood is an essential part of my diet, so I’m always looking for new great ways to prepare it.
I whipped up some of my fav, fav, fav salmon dishes for you ladies to try out at home. And the best part is, they’re all ready in less than 30 minutes! For all my busy mommas on the go, these will save your life, and every bite is to die for!
Honey Glazed Salmon
Ingredients:
- 1 tablespoon whole coriander seeds
- 1/4 cup honey
- 5 tablespoons soy sauce
- 2 teaspoons fresh lemon juice
- 4 salmon fillets (5 ounces each), skinned
- 2 teaspoons vegetable oil
Instructions:
- To make the glaze, stir together crushed coriander seeds, honey, soy sauce, and lemon juice in a bowl.
- Coat salmon with glaze.
- Heat extra glaze in pan.
- Turn fillets over, and cook 3 minutes for medium to rare.
Roasted Salmon with Lime and Cilantro
Ingredients:
- 4 skin-on salmon fillets (6-ounces each)
- Coarse salt and freshly ground pepper
- 1/4 cup fresh lime juice
- 2 tablespoons soy sauce
- 1 teaspoon sugar
- 1 tablespoon chopped fresh cilantro leaves
Instructions:
- Heat oven to 450 degrees.
- In a shallow pan sprinkle salmon with salt and pepper.
- Cook for 10-15 minutes. Remove fillets.
- In a small bowl, mix together with lime juice, soy sauce, and sugar; fold in cilantro. Spoon sauce over fish
Broiled Salmon with Spinach and Feta Saute
Ingredients:
- 4 skinless salmon fillets
- Coarse salt and ground pepper
- 1 tablespoon olive oil
- 2 bags (5 ounces each) baby spinach
- 1/2 cup of feta, crumbled (2 ounces)
- 1/3 cup of pine nuts
- 2 teaspoons fresh lemon juice
Instructions:
- Place salmon on a baking sheet. Then sprinkle salt and pepper.
- Broil throughout for 5-7 minutes.
- Meanwhile, in a large skillet, heat oil over medium.
- Add as much spinach as will fit; season with salt and pepper.
- Cook spinach until moist.
- Stir in feta, pine nuts, and lemon juice.
