Recently, over at InStyle, I shared my favorite summer recipe: grilled romaine lettuce. I know, I know. It may sound a little boring to some but it’s actually quite the opposite. When sprinkled with olive oil and herbs, the romaine’s flavor and texture is the perfect low-calorie, skinny side dish.
Whether you’re preparing for a potluck or throwing it on the grill for dinner, here’s how to make this delicious summer favorite:
Ingredients:
STEP 1: Wash romaine and pull off any wilted leaves. Chop off the lettuce heads about 1-2 inches in.
STEP 2: Mix together herbs, vinegar, and olive oil. Marinate the leaves generously. Sprinkle on salt and pepper to taste.
STEP 3: Fire up the grill on high heat. Grill the leaves until lightly browned on all sides, turning every couple of minutes.
STEP 4: Once browned, take off grill and let cool. Either serve them whole or chop as a salad. Either is delicious! I always serve mine with some salmon or chicken for a well-balanced plate. Add some chili flakes for some spice, if needed!
