Now that school is back in session, it’s the perfect time to start thinking about good and healthy breakfasts that will get the kids going. While in The Hamptons, I met up with Susan Larsen (aka Vegan Monkey) who is a vegan chef and caterer in the area. I’ve been really wanting to learn new meatless or vegan recipes so I knew Susan was my girl!
Every Monday, for the rest of September, I’ll be sharing the delicious dishes we cooked up together in my kitchen. She taught me 4 recipes for each meal of the day–breakfast, lunch, dinner, and dessert. Yes, dessert is ALWAYS a meal in my house.
Vegan Monkey’s Vegan French Toast is worth waking up for. So, what makes this recipe vegan? No eggs, no dairy, and lots of delicious substitutes.
Get the recipe below:
STEP 1: In a large bowl, mix the non-dairy milk, mashed banana, and chia seeds and let stand for 5 min. while you slice the bread.
STEP 2: Continue to add all remaining ingredients to the bowl.
STEP 3: Heat skillet with non-dairy butter making sure not to burn. Soak sliced bread into french toast mixture so that both sides of the bread are coated. Heat in pan until golden brown on both sides
STEP 4: Serve with fresh berries and maple syrup. Enjoy!
