So, yesterday morning I received an email from Brookie’s preschool. An email that all mothers dread. He volunteered…for snack duty. And guess what? I had less than 24 hours to whip up some homemade Halloween treats. Does this sound familiar to anyone?
To keep it healthy, I decided to try out these adorable Monster Bites I’ve been seeing all over Instagram. They are the epitome of a last-minute snack duty lifesaver! There’s no baking and little prep yet they look super impressive. I didn’t even have to run to the store. As long as you have apples, you can get creative with the rest of the monster ingredients.
I even had a unicorn named Scarlett to help me out. She loved creating her own!
STEP 1: Cut apples in slices.
STEP 2: Coat one side of each apple slice with almond butter. Combine 2 slices to create a mouth. Add more almond butter so they easily stick together.
STEP 3: Add almonds and sunflower seeds for the teeth, sliced strawberries for a tongue, mini marshmallows for the eyes, and black icing for the pupils. Mix and match to keep all the monsters unique.
TIP: If your school has a strict nut policy or a student that’s allergic–substitute the almond butter with sunflower seed butter.
