Super Bowl Sunday is approaching (Let’s go PATRIOTS!!!) and if your family is anything like mine, we are a FOOTBALL family! Whether you’re hosting this year’s Super Bowl party or just attending, I have two recipes that are crowd pleasers every year. Both of these are in my book, Everyday Chic. Let’s start off with my No Fail Nachos. I like to make an easy, delicious appetizer to get the taste buds going. Nachos are a great way to feed a crowd during a casual get-together before kick-off. I have never met a plate of nachos I didn’t like. Honestly, have you?!
Yield: 4 to 6 servings
6 cups corn tortilla chips
2 cups shredded mozzarella or cheddar cheese
1 (16-ounce) can black beans, rinsed and drained
4 roma tomatoes, cored, seeded, and diced
1/2 to 3/4 cup diced red onion
6 radishes, trimmed and sliced
1 large avocado, pitted, peeled, and diced
1 jalapeño, thinly sliced
1/2 cup chopped fresh cilantro
Preheat the broiler. Arrange the chips in one layer on a baking sheet. Sprinkle the chips with the cheese, evenly spoon the beans on top, and broil until the cheese melts, 1 to 2 minutes. Remove from the oven and scatter the tomatoes, onion, radishes, avocado, jalapeño, and cilantro over the nachos. Serve hot.
Now, time for my favorite part: cocktails! I’ve been known to turn any sugary alcoholic drink into a skinny delight that you won’t feel guilty about drinking. For the Super Bowl, I love to whip up my Skinny Moscow Mule!
Served in copper mugs, this version of the classic vodka cocktail has been lightened up with green tea, diet ginger beer, and grated fresh ginger to make it the perfect fit for everyday supermodels. We’ve served this at a bunch of backyard barbecues and it’s always a hit with the ladies and gents. To really lighten it up, replace the ginger beer with sparkling or soda water. Also, subtracting the vodka for preggos and teetotalers doesn’t make it any less delish!
Yield: 4 servings
2 cups chilled diet ginger beer (I like Bundaberg) or diet
Ginger ale
1 cup vodka
1 cup chilled green tea
1/4 cup fresh lime juice
1 teaspoon grated peeled fresh ginger
4 slices peeled fresh ginger
4 thin lime slices
Stir together the ginger beer, vodka, tea, lime juice, and grated ginger in a pitcher. Fill copper mugs or glasses with ice and pour the vodka mixture over it. Garnish with ginger and lime slices and serve.
